Raw honey has not been heated and simply filtered through a large mesh screen. The screen removes larger particles and allows pollen, propolis and beeswax particles to pass through it. Bamboo honey comes from the Japanese Knotweed plant which is found in 39 of the 50 states.
This plant is considered a very invasive weed. In the U.S.A. it is listed as an invasive weed in Ohio, Vermont, Virginia, New York and Washington states.
Other English names for Japanese knotweed include fleeceflower, Hancock's curse, elephant ears, pea shooters, donkey rhubarb (although it is not a rhubarb), sally rhubarb, Japanese bamboo, American bamboo, and Mexican bamboo. Japanese knotweed flowers are valued by some beekeepers as an important source of nectar for honeybees, at a time of year when little else is flowering.
Japanese knotweed yields a monofloral honey, usually called bamboo honey by northeastern U.S. beekeepers, like a mild-flavored version of buckwheat honey. This honey is a very dark honey and also has a pleasant sweet taste to it.

Love the eBee Unheated and Raw Bamboo Honey! This honey is not just "RAW" - which technically, by law, can be actually heated to 120 degrees, which kills many of the valuable enzymes. It is "unheated" which is vastly different. Anything over 90 degrees kills enzymes, and you can tell just by looking at a "RAW" honey whether or not it has been heated, because IF it has been heated to just under 120 degrees, it will look glassy and somewhat clear, and also get "rock solid" over time. Unheated honey does not look clear at all. It is loaded with enzymes, which make it very cloudy, somewhat textured and gooey, but it still flows in the summertime, and will not get "rock solid." Note: In the wintertime, if unheated honey gets below 70 degrees or so, it will not flow. It the summer, it reverts back and will flow. The eBee honey has all the observable qualities of a truly "unheated" honey. I think it is top notch, and a great value!!!!!! Love it!

This product deserves all the stars, not just 5. You know you have truly raw quality in your hands just by looking at it. And the texture and taste more than validates this notion. It is incredibly nutritious and the taste is amazing. For health reasons, I consume raw aloe vera juice daily, but the only way I can drink it is if I mix it with your honey, which in turn enhances the nutritional value of the experience. As with the 5lb Bamboo I use this for mead making. It has a very good flavor for whatever you might use it for. I highly recommend this.
