Raw Fireweed Honey is a light-colored, delicate honey known as the "champagne of honeys," prized for its mild, sweet, and slightly spicy or buttery flavor with floral, fruity, and vanilla notes.
Often a result of bees foraging on the vibrant pink fireweed flowers that grow in areas recovering from wildfires, particularly in regions like Alaska and the Pacific Northwest. Plants can grow up to 8 feet tall.
Fireweed Honey is fantastic in tea or coffee. Enjoy on breads, in yogurt, with smoothies and oatmeal. Delicious with fresh fruit and cheese or as dessert over ice cream. Perfect for delicate pastries and macarons, paired with white or green teas, drizzled over salmon, or used in light salad dressings with mixed greens.
A premium, single source honey from beekeepers in the Pacific NorthWest. Only limited quantities are made every year.
